
Beet borscht seasoning for winter
Description
Winter preserve at home. Pour the hot marinade into clean, dry sterilized jars and seal with lids. Turn the jars upside down and wrap in a blanket. After cooling, store in a pantry or cellar. Keep in a cool, dark place.

First, prepare the vegetables. Pour boiling water over the tomatoes, then plunge them into cold water. The skins will peel off easily. Remove them and dice the tomatoes finely. Grate the beets and carrots on the coarse side of a grater; dice the onion and bell pepper. Remove the seeds from the pepper first. Mince the herbs.

In a cast-iron kazan, sauté the carrots for 5–7 minutes. Use odorless vegetable oil. Add the carrots to a kazan that is already hot.

Add the onion to the same pan and sauté with the carrots for another 10 minutes. Stir constantly.

Then pour in the water and add the beets. Mix well and simmer for another 15 minutes.

Then add the pepper and tomatoes.

Add the sugar and salt, pour in the vinegar, and mix everything thoroughly. Simmer covered for 10 minutes.

Add the herbs, stir, and simmer for another 10 minutes. The dressing is ready.
