
Casserole with rice and chicken
Description
The dish is prepared without unnecessary complications. For those who prefer it spicier, you can add salsa sauce instead. The ready dish can be served.

Let's start with the chicken. We wash it under cold water and place it into boiling salted water for about 30-40 minutes. Cooking time will depend on the chicken itself.

While the chicken is boiling, we proceed to the rice. It also needs to be thoroughly rinsed. To make it fluffy, pour about 4 cups of water into a pot, salt it, and then add the rice to the boiling water. It's better not to stir the rice so it doesn't break apart.

Cook the rice over low heat for about 25–30 minutes, remembering to check how much water is left in the pot.

While the main ingredients for our chicken and rice casserole are cooking, let's briefly turn to the cheese. Grate it on a coarse grater.

And since no traditional Mexican dish is complete without fresh herbs, we will, of course, not forget the greens. They should be finely chopped, and it doesn't matter which type of greens you use. Also, cut the already cooked chicken into medium-sized pieces.

Now add the beans and corn to the bowl, but without the water; if desired, you can add a few spoons of brine. Don't forget to pour in a glass of sauce and add half of the cheese. Then add the rice and chicken, season with salt and pepper, sprinkle with oregano, and mix well.

Place our mixture into a baking dish, previously greasing well both the bottom and the sides with oil. Sprinkle with cheese and put into an oven preheated to 190 degrees.

After half an hour, remove the casserole and portion it onto plates. When serving, the casserole can be garnished with a few lime slices or sprigs of fresh herbs.
