
Baked casserole with beans and bacon
Description

1. Cut bacon into slices, and chop the onion and bell pepper. Mince the garlic. Trim the ends off the green beans. Blanch the beans in lightly salted boiling water for about 3-4 minutes. Remove the beans from the boiling water and place them into a bowl of ice water. Set aside.

2. Heat a skillet over medium heat. Add the bacon pieces. Cook the bacon for 2 minutes, then add the chopped onion and garlic, and sauté for another 3-5 minutes, until the onion turns golden. Remove from heat and set aside.

3. Preheat the oven to 175 degrees. In a separate skillet or saucepan, melt the butter over medium heat. Add the flour and whisk constantly to blend it evenly with the butter. Cook for 1-2 minutes.

4. Then pour in the milk and milk mixed half-and-half with cream. Continue cooking, stirring constantly, until the sauce thickens, about 2 minutes.

5. Add salt, black pepper, and cayenne pepper. Then add grated Cheddar cheese. Cook, stirring, until the cheese is melted. Turn off the heat.

6. Add bell pepper, then add bacon with the onion-garlic mixture. Mix until well combined. Add beans and gently stir.
