
Budapest-style casserole
Description
Perfectly pairs with tea and coffee. Choose firm, same-sized, slightly flattened tomatoes for stuffing—they are especially convenient to pack tightly into a baking dish. I made a half portion, but this recipe is so good, you can easily double it. Can be served with tea or coffee.

Start by preparing the shortcrust pastry. I always make it using a food processor. It's easy, quick, and yields excellent results. Put the flour sifted with baking powder and salt into the bowl, add cold butter cut into pieces. Pulse in short bursts until the mixture resembles crumbs.

Add the yolk and a couple of tablespoons of very cold water, mix until the dough comes together into a ball. If it doesn't come together, add another half or one tablespoon of water. Place the finished dough in a bag and refrigerate for half an hour.

Peel the onion and chop into small cubes. Sauté in oil until translucent.

Add the minced meat and cook, stirring, until crumbly and browned.

Cool the minced meat to lukewarm, season with salt and pepper to taste. Add the egg yolk, breadcrumbs, and ground coriander. Mix the mince thoroughly.

Cut off the "lid" from the tomatoes, remove the flesh with a spoon, salt the inside of the tomatoes, and place them on a plate cut-side down to drain the juice.

Remove the dough from the refrigerator and roll it out to a one-centimeter thickness. Place it into the prepared pan, slightly raising the edges.

Fill the tomatoes tightly with the stuffing, place them cut-side down onto the dough. If there is a little stuffing left, you can place it between the tomatoes.

For the filling, beat the eggs with cream using a fork, season with salt and pepper to taste. Add chopped herbs and grated cheese. Mix once again.

Pour the casserole and place in a preheated oven at 180 degrees for about 20-25 minutes.

The edges will rise well, brown, and start pulling away from the pan. Let the casserole stand for about 5-10 minutes after removing it from the oven.
