Peel the skin and cut the pumpkin into cubes, removing the seeds.

Transfer the pumpkin to a saucepan, pour in the milk. Simmer over low heat until tender, about 10 minutes.

Add the semolina, mix well, and cook for another 7–8 minutes. Add sugar and stir thoroughly until smooth, or blend with an immersion blender.

Now add the egg yolk.

Separately beat the egg white into a stiff foam. Gently fold the egg white into the pumpkin-apple mixture.
