
Pumpkin Casserole with Prunes

Homemade pastries for tea. I’d like to suggest that you make a pumpkin casserole with prunes. This casserole will appeal to both adults and children. Instead of prunes, you can use any dried fruits to your taste: raisins, dried apricots, etc. If you love pumpkin dishes, be sure to take note of this simple recipe.

Prepare all the ingredients.

Cut the pumpkin into cubes and boil until done. I bake the pumpkin in the microwave until soft (you can bake it in the oven).

Drain all the water from the pumpkin and puree it using an immersion blender or any other convenient method. Add sugar and butter, and mix everything well.

Then add the semolina. Stir and leave for 20–30 minutes so that the semolina can swell.

Rinse the prunes, pour warm water over them, and leave for 20 minutes. Then cut into cubes and add to the remaining ingredients.

Mix everything and transfer the mixture to a baking dish greased with oil. The bottom and sides can be sprinkled with semolina. Bake in the oven at 180°C for about 30 minutes.
