
Pumpkin casserole
Description
Pumpkin casserole is a very simple yet extremely delicious dish. It takes about an hour to prepare, but my family loves it so much that they are always happy to wait while it's baking. In the fall, when fresh young pumpkin is available, we make it constantly—almost every other day. It's really tasty. I hope you'll enjoy this pumpkin casserole recipe too. Prepare all the necessary ingredients.

Cut the pumpkin in half, remove the seeds, peel off the skin, and cut into small cubes.

Sprinkle the pumpkin pieces with sugar and let stand for 10-15 minutes.

Rinse the rice and put it on to cook for about 15 minutes. As always, the water level in the pot should be about two fingers higher than the rice.

Then transfer the pumpkin with sugar to a frying pan and simmer over medium heat for about 20 minutes (until soft). Occasionally add water to the pumpkin, stir, and simmer covered.

Then add butter to the rice porridge. The butter must melt completely.

Mix the pumpkin with the rice.

Add the eggs to the pumpkin with rice and mix well. However, the pumpkin and rice should already be cooled! Otherwise, the eggs will curdle.

Grease the baking pan with oil, pour the pumpkin-rice mixture into it, and bake in a preheated oven at 170 degrees for 10-15 minutes.
