
Semolina casserole
Description
The dish is prepared without unnecessary complications. You can serve it with a separate sauce made of sour cream and herbs. This makes an excellent side dish or a standalone meal. Use ripe tomatoes, and feel free to add thyme, rosemary, basil, or any dry spices to taste. Serve the finished dish warm.

1. Wash the tomatoes (use meaty ones: cherry or plum), then slice them into rounds, and rinse the millet.

2. Peel the onion and slice it into thick half-rings, sauté in a frying pan with 0.5 tablespoon of olive oil, sugar, and a pinch of dried basil for 2-4 minutes.

3. Grease the baking dish with olive oil, place the sautéed onion on the bottom, then cover it with a layer of tomatoes.

4. Finely chop the garlic and sprinkle it over the tomatoes, then add a pinch of dried basil and salt.

5. Next, add the millet as the next layer, spread it evenly, and pour boiling water over it.

6. Place the remaining tomatoes, garlic, and fresh thyme on top, season with salt, and drizzle with a few drops of olive oil.

7. Place the dish in a preheated oven at 170 degrees for 40 minutes. After half an hour, check the millet and add a little water if necessary. Let the casserole rest for 15 minutes before serving, then garnish with basil leaves and serve.
