
Vegetable casserole with chicken and cheese
Description
This recipe will be a lifesaver when you're exhausted but still want to treat yourself to something delicious. You can improvise by adding your favorite vegetables and spices. Plus, the dish is extremely quick to prepare: while the rice is cooking, you prepare the rest of the ingredients, mix everything together, and put it in the oven. If you like spices, add a hot sauce (such as chili) to the casserole—this will give the dish a whole new flavor dimension. A glass of wine will perfectly complement the casserole's wonderful taste. Put the rice on to cook and preheat the oven to 180°C. Place a frying pan over medium heat, pour in olive oil, and add the chicken fillet cut into cubes. Season with salt, add spices, and cook for about 10 minutes until done, then transfer the chicken fillet to a plate. In the same frying pan, sauté the onion until translucent (about 4 minutes).

Add broccoli to the onion and cook over medium heat for another minute. Then add spinach and corn to the pan for 1–2 minutes to warm the vegetables. Transfer the vegetables to the dish with the chicken and mix well.

Now let's move on to preparing the sauce. Melt the butter in a small saucepan. Add flour and salt, cook over medium heat for a couple of minutes, stirring constantly, until the flour darkens slightly. Gradually start adding the cream in small portions, continuously stirring, to obtain a smooth mixture without lumps.

Bring to a boil, then remove the pan from the heat after one minute. Let it cool, and in the meantime gently combine the sour cream, cheddar, and Parmesan. Mix with the chicken, rice, and vegetables, then pour the mixture into the prepared baking dish.

Bake in the oven for 15 minutes, add the sauce and leave in the oven for another 5 minutes, until the cheese melts. Serve hot and enjoy the amazing flavor!
