
Greek-style eggplant casserole
Description
For the casserole filling you can use pork-and-beef mince or beef mince only. Tomato sauce can be replaced with fresh tomatoes or tomato paste. And instead of béchamel sauce you can use 20% fat cream.

Prepare all the ingredients you need to make Greek-style eggplant casserole.

Prepare the béchamel sauce. In a saucepan, melt the butter, add the flour and cook it briefly, then pour in the milk in small additions while stirring constantly, and bring the sauce to a boil. Add salt and ground black pepper to the sauce and simmer until thickened, then remove from the heat.

Finely chop the onion and garlic and sauté until tender in a small amount of oil.

Add the tomato sauce and simmer for a few minutes. Season to taste.

Slice the eggplant into rounds and fry in a minimal amount of oil for about a minute on each side.

Cut the “Mozzarella” cheese into thin slices.

Assemble the casserole. Spread half of the fried eggplant on the bottom of the baking dish.

Spread half of the tomato sauce on top.

Then spread half of the minced meat in an even layer.

Pour half of the béchamel sauce over.

Repeat the layers. Bake in a preheated oven at 180°C for 35–40 minutes.

Remove the casserole from the oven, spread the cheese on top, and bake for another 10 minutes.
