Description

It pairs beautifully with tea and coffee. The dish comes out light and nutritious. Bear in mind, though: even though eggplants are among the foods permitted for diabetes, not everyone with type 2 diabetes should eat them. This wholesome vegetable has a number of contraindications—be sure to look them up before you use it.     Dice the onion and sauté until softened. Then add the flour and keep sautéing for another couple of minutes. After that, transfer the onion to a plate for now.

    Fry the eggplant until halfway cooked. Pour boiling water over the tomatoes, peel, dice them, and add them to the eggplant. Return the fried onion to the pan.
