Step 1

1. Let's start with making the pancakes. Combine the milk with the eggs, melted butter, salt, and sugar. Whisk well.
- 2
Step 2

2. Add the flour, and using a mixer bring the dough to a smooth consistency.
- 3
Step 3

3. If you didn't manage to achieve a smooth dough without lumps, that's okay. Take a sieve and strain the dough.
- 4
Step 4

4. Heat the crepe pan, grease it only before the first crepe. Pour the batter and fry.
- 5
Step 5

5. Fry on both sides until golden brown. The pancakes flip easily with a spatula, they don’t tear.
- 6
Step 6

6. I ended up with 14 pancakes.
- 7
Step 7

7. Now let's prepare the filling. In vegetable oil, sauté the chopped onion until soft.
- 8
Step 8

8. Wash the spinach well, let it drain. Chop it. Add it to the cooked onion and sauté for a minute so the spinach wilts.
- 9
Step 9

9. Add 100 ml of cream, a pinch of salt, pepper, and nutmeg. Heat through and remove from the heat.
- 10
Step 10

10. Let the potatoes cool, peel them, and grate them using a coarse or fine grater, as you like.
- 11
Step 11

11. Crush the peeled walnuts in a mortar or finely chop them with a knife.
- 12
Step 12

12. Combine the grated potatoes, chopped nuts, the remaining 50 ml of cream, and spinach. Mix well; the filling is ready!
- 13
Step 13

13. Place the pancake on a plate or a board. In the center, in the shape of a square, place the filling (about 1.5 tbsp with a mound), smooth it out. Fold the side edges.
- 14
Step 14

14. Roll into a small roll.
- 15
Step 15

15. Stuff all the pancakes this way.
- 16
Step 16

16. Now we will make cheese sauce. Melt butter with flour. Stir constantly with a spoon so there are no lumps.
- 17
Step 17

17. Pour in the hot milk, stirring constantly so that lumps do not form. Add salt, nutmeg, and as soon as the sauce begins to thicken, stir in the grated cheese. Heat the sauce.
- 18
Step 18

18. Remove from heat. The sauce is ready.
- 19
Step 19
