Baked Sweet Potato with Onion and Cheese

Description

The dish is prepared without unnecessary complications. Preheat the oven to 230 degrees. Place the potatoes on a baking sheet and bake until tender, about 45 minutes. Meanwhile, melt the butter in a large skillet over low heat. Add the onion and cook until soft, about 15 minutes. Season with sugar, salt, and pepper, then stir. Continue cooking, stirring occasionally, until the onion becomes very soft and caramelized, about 1 hour. Add a tablespoon of water from time to time if the pan dries out too quickly. Stir in the vinegar, then set aside. Break the cooked potatoes in half and mix with the caramelized onions and cheese. Serve warm. The dish is ready to be served.
