
Baked Sweet Potato with Bacon and Cheese

1. Preheat the oven to 175 degrees. Peel the potatoes and slice them. Place the potatoes in a large pot of boiling water. Boil for 5–10 minutes. Set aside.

2. Meanwhile, cook the bacon in a large skillet over medium heat until crispy. Transfer to a paper towel to drain the fat. Chop the bacon into small pieces and set aside.

3. Add finely chopped onion to the pan and sauté until soft. Mix in flour over low heat and cook until a paste-like consistency forms. Add salt and pepper.

4. Add milk and cook until the mixture thickens slightly.

5. Place half of the sweet potatoes into a baking dish. Sprinkle with half of the bacon pieces. Pour half of the onion-dairy mixture over the top. Then add the remaining potatoes, sprinkle with the rest of the bacon, and pour the remaining sauce on top.

6. Sprinkle Parmesan cheese on top. Bake in a preheated oven for 20 minutes, until the potatoes are tender. Serve immediately. Tip: You can prepare this dish in advance, cover it, and refrigerate for one day. Reheat in the oven at 160°C for 15 minutes, then remove the lid and continue baking until the dish is thoroughly heated.
