Baked spinach with cheese

Baked spinach can be served with steak, cutlets, veal, chicken, fried fish, baguette, or boiled eggs.

    1. Wash the spinach and place it in a large saucepan. Cook over high heat, stirring occasionally, until wilted, about 2–4 minutes for baby spinach and 4–6 minutes for regular spinach.

    2. Place the spinach in a colander, immediately fill the pot with cold water, put the spinach back into the pot with cold water, and drain again.

    3. Squeeze out as much liquid from the spinach as possible. Finely chop the spinach to yield about 3 cups of chopped spinach. Heat 2 tablespoons of butter in a saucepan over medium-high heat. Add the spinach, stir, and cook for 2–3 minutes, until all the moisture evaporates and the spinach begins to stick to the pan.

    4. Reduce the heat and sprinkle the spinach with flour. Stir and cook for 2 minutes. Add 2/3 of the broth or cream. Simmer over low heat for 1–2 minutes, stirring constantly to prevent sticking. You may add another tablespoon of butter. If needed, add the remaining liquid. Season with salt and pepper. Preheat the oven to 190 degrees. Lightly grease a shallow baking dish with oil. Mix 1/2 cup of grated cheese into the spinach mixture and transfer it into the baking dish.

    5. Sprinkle the remaining cheese and breadcrumbs on top. Melt the remaining 1 1/2 tablespoons of butter and pour over the top. Bake until lightly browned on top, about 30 minutes.
