Prepare all the necessary ingredients. Choose a tasty ryazhenka, as the flavor of the dessert depends on it. Instead of honey, you can use sugar or a sugar substitute.

Place the packet of ryazhenka in the freezer 10–12 hours in advance.

Line a colander with several layers of cheesecloth. Take the frozen container of ryazhenka from the freezer, cut open the packaging, remove the frozen ryazhenka, and transfer it into the colander lined with cheesecloth. Place the colander with ryazhenka over a bowl, cover with cheesecloth or plastic wrap, and refrigerate for 24 hours. During thawing, you can stir the ryazhenka gently with a spatula. The whey will drain into the bowl, leaving a delicate creamy mass in the colander.

Squeeze out the excess whey, and transfer the curds to a plate. The whey can be used to make pancakes, fritters, and other baked goods.

Beat the eggs into a bowl and mix with honey and vanillin.
