
Baked potatoes with onions, cheese and sour cream
Description
This recipe is unusual because the potatoes are baked twice – first the whole potatoes separately, and then grated potatoes with a cheese and onion mixture. Baked potatoes go well with steak.

1. Preheat the oven to 220 degrees. Wrap the potatoes in aluminum foil. Bake the potatoes on a baking sheet in the oven until cooked through—this will take about an hour. Remove the foil and let the potatoes cool to room temperature. Place the potatoes on a plate or in a plastic container, cover with plastic wrap, and refrigerate overnight.

2. Grate the cooled potatoes on a grater or in a food processor.

3. Place the grated potatoes in a bowl and add the chopped shallot and 1 3/4 cups of grated cheese. Season with salt and pepper. Gently mix the mixture by hand.

4. Add sour cream and mix.

5. Transfer the resulting mixture to a baking dish. Sprinkle the remaining cheese on top.

6. Bake the dish in the oven at 175 degrees until golden brown, about 30 minutes. Let it cool slightly and serve immediately.
