
Baked Potatoes with Onions and Thyme
Description
The dish is prepared without unnecessary complications. Crispy potatoes with thyme and onion will make an excellent side dish for dinner. Serve the potatoes with pieces of goat cheese and fried bacon. The finished dish can be served at the table.

1. Preheat the oven to 190 degrees. In a small bowl, mix olive oil and butter. Using a sharp knife, slice the peeled potatoes very thinly crosswise. Pour 1 tablespoon of the oil mixture onto the bottom of an oval baking dish and spread it evenly across the bottom. Sprinkle with a few pinches of salt and red pepper flakes—this will season your potatoes not only on top but also from the bottom. Arrange the potato slices vertically in the prepared dish.

2. Slice the shallot thinly with a sharp knife and place it between the potato slices, distributing it as evenly as possible. Brush the potatoes with the remaining butter mixture. Sprinkle with salt and red pepper flakes. Bake for 1 1/4 hours, then place thyme sprigs on top and continue baking for about 35 minutes, until the potatoes are crispy on top.

3. If the potatoes are browning too quickly, wrap them in foil. Serve the cooked potatoes with pieces of goat cheese and slices of fried bacon.
