Chicory lettuce is not the most popular ingredient in the kitchen, and if it ends up in your hands, not every home cook knows how to prepare it deliciously. I suggest you keep in mind this amazingly simple option for a light, healthy, and appetizing appetizer—roasted chicory. It can be served warm or chilled.

1. First of all, turn on and preheat the oven. The recipe for baked chicory is not particularly difficult, even for beginner cooks. Wash the chicory and pat it dry.

2. Now wrap the chicory in bacon or ham. It’s best to use fairly thin, soft slices so they wrap easily. You can vary the meat components to get new flavor notes.

3. One of the important components of this dish is the dressing. To make it, wash a sprig of thyme and peel the garlic. Add to a blender along with a little sugar, olive oil, and balsamic vinegar. If you like, you can also add your favorite herbs, fresh greens, or tomato, for example. Blend until smooth.

4. Pour the prepared sauce over the chicory, previously arranged in a heatproof dish. Bake in the oven for 25–30 minutes.

5. Meanwhile, grate the cheese on a medium or fine grater. When the home-baked chicory becomes soft, sprinkle the cheese on top and return to the oven for another 3–5 minutes. When the cheese has melted, remove the dish, let it cool slightly, and serve.
