
Baked bell pepper with capers and mozzarella
Description
The appetizer is quick and easy to prepare. This dish can serve as both a wonderful spicy appetizer and a light dinner. If you use bell peppers of different colors, the dish will turn out very colorful and appetizing.

1. Preheat the oven to 200 degrees. Place the bell peppers on a large baking sheet lined with aluminum foil and bake for 45 minutes to 1 hour. Using tongs, turn the bell peppers every 15 minutes onto one of four sides. This way, the peppers will be evenly roasted on all sides and will not burn.

2. As soon as the peppers are ready, cover the baking sheet with another sheet of aluminum foil and let cool. When the peppers have cooled, remove the skin and seeds.

3. Cut into strips about 6 mm thick. Mix the peppers in a bowl with red wine vinegar, minced garlic, and a few pinches of salt. Cover with a lid and let the peppers marinate for 1 hour or overnight (up to 4 days) in the refrigerator.

4. Before serving, arrange the bell peppers on a plate. Add salt and ground black pepper to taste. Drizzle the peppers with olive oil, sprinkle with capers and chopped parsley, and top with slices of Mozzarella cheese. Serve with crusty bread and a glass of wine.
