Instructions

Step 1

Start making sushi with the rice. Rinse it well and soak for 20 minutes in cold water. Then pour water into a pot, add the rice, bring to a boil, and cook over low heat for 20 minutes. Drain the remaining water and let it cool.

Step 2

When the rice has completely cooled, take a rolling mat for making rolls. Place plastic wrap on the mat, then place a sheet of nori and spread the rice in a thin layer with your hands, without pressing too hard. Carefully flip the nori sheet with the rice on it.

Step 3

Spread the filling across the full width of the nori sheet, leaving about 1 cm from the edge. Arrange the asparagus, then place the caviar and salmon fillet on top.

Step 4

Now we roll up the roll. Starting from the edge of the bamboo mat, gradually roll up the sushi with the filling. Press lightly with your fingers so the ingredients fit snugly together.

Step 5

Into one plate, pour bread crumbs; into another, tempura batter (for the batter, mix egg, starch, flour, water, salt, pepper, and baking powder). To seal the roll with the batter, carefully dip the ends, then coat it completely with batter. Quickly move the roll to the plate with bread crumbs and roll it in them so the roll is covered evenly on all sides. Carefully place the roll in a preheated deep fryer and leave for 5 minutes until a light brown crust forms. Then remove the roll and place it on a paper towel to get rid of excess fat. Let cool for 10 minutes.

Step 6

To keep sushi from sticking while you slice, moisten the knife with cold water. Cut the sushi into 1.5 cm (about ⅝ inch) slices.

Step 7

Serve baked sushi at the table the same way as any other sushi - with pickled ginger, wasabi, and soy sauce.
