Baked ravioli

Description

Preheat the oven to 160 degrees. Heat the oil in a large saucepan over medium heat. Add the onion and garlic, season with salt and pepper, and cook, stirring, until soft, about 5 minutes. Add thyme and tomatoes. Bring to a boil, reduce the heat, and simmer, mashing the tomatoes with a spoon, until the sauce thickens and reduces to about 5 1/2 cups, 20 to 25 minutes. Meanwhile, cook the ravioli in a large pot of boiling salted water. Drain and return the ravioli to the pot. Mix with the sauce. Transfer the mixture into a large baking dish and sprinkle with cheese. Bake until golden, 20 to 25 minutes. Let cool slightly before serving.
