
Baked peppers with minced meat
Description
The dish is prepared without unnecessary complications. Take medium-sized firm peppers of approximately the same size, cut off the tops, remove the insides, and stuff them. Season the filling with sautéed onions and carrots, and spices. Place the peppers in an ovenproof dish, pour sauce over them, and bake in the oven covered, or simmer them on the stove. Serve the finished dish hot.

For cooking this dish, it's best to use medium-sized peppers of approximately the same size. You will also need ground meat, onion, carrot, rice, ready-made tomato juice, and spices.

Peel the onion and carrot, finely chop the onion, and grate the carrot on a coarse grater.

Heat 2-3 tablespoons of vegetable oil in a skillet and sauté the onion with carrots until golden brown.

Rinse 0.5 cup of rice well, pour 1 cup of cold water, bring to a boil and cook for 15-20 minutes until done, adding salt.

Wash the sweet peppers and remove the seeds, taking care not to damage the sides of the peppers.

Add the prepared sauté, cooked rice, a pinch of salt, and ground black pepper to the minced meat. The rice to meat ratio should be approximately 1:3.

Mix everything thoroughly.

Tightly pack the prepared peppers with the filling.

Place the peppers in a large container, then add tomato juice and sour cream (mix the sour cream with a small amount of juice first to ensure it spreads evenly).

If cooking on the stovetop, bring to a boil and simmer for 35–45 minutes after boiling, covered, over low heat. Add salt and pepper to taste during cooking. If using the oven, cover the heatproof dish containing the peppers and sauce with a lid, place in a preheated oven at 190°C, and bake for 35–40 minutes.
