
Baked Chicken Meatballs

1. Preheat the oven to 200 degrees with the rack in the upper third. Break the Italian bread into small pieces. Soak the bread in milk in a small bowl until soft, about 4 minutes. Finely chop the bacon, onion, and parsley. Mince the garlic.

2. Cook bacon, onion, and garlic in 1 tablespoon of olive oil with 1/2 teaspoon of salt and pepper in a large skillet over medium heat until the onion becomes soft, about 6 minutes. Let the mixture cool slightly. Squeeze the milk-soaked bread to remove excess milk. Lightly beat the egg in a large bowl, then mix in the chicken, 1 tablespoon of tomato paste, bacon mixture, bread, and parsley.

3. Shape the mixture into 12 meatballs and place them on a baking sheet or in a baking dish. Mix the remaining tablespoon of tomato paste and oil, then brush the mixture over the meatballs using a brush.
