
Baked Shrimp in Coconut Flakes

Great for a holiday or for everyday. The combination of pineapple, coconut, and shrimp is quite unusual, but incredibly amazing! If you love trying something new, you should definitely give this recipe a try. For the breading, by the way, you can also add hot pepper for those who like a bit of spice, or stick with spices and herbs for aroma. The process is simple and fairly quick, so it's definitely worth adding to your collection. Serve with greens and sauce.

1. First, make the syrup. Combine pineapple juice and sugar in a small saucepan. Bring to a boil and simmer over medium heat until reduced by about half (12–15 minutes). Pour into a deep bowl and let cool.

2. While the syrup is simmering, you can prepare the breading. Combine coconut flakes, flour, salt, ground garlic, and pepper. Mix gently.

3. Place the cleaned shrimp in the syrup.

4. Then coat on all sides in breadcrumbs and place on a baking sheet lined with parchment paper. Transfer to an oven preheated to 200°C.

5. Coconut-crusted baked shrimp will be ready in about 10 minutes once they turn golden brown.
