It's very easy to make, and the well-balanced combination of ingredients and spices results in a harmonious flavor. So, here's how to bake zucchini with potatoes: Place an olive oil-greased baking sheet into a preheated oven. Arrange on it a mix of sliced zucchini, potatoes, bell pepper cut into strips, parsley, finely chopped garlic, tomatoes, onion cut into half-rings, salt, and black pepper. Spread the vegetables evenly across the baking sheet and sprinkle with oregano. Bake for approximately 1 hour (depending on the thickness of the pieces), stirring occasionally. That's it! As soon as the vegetables are fully cooked, take them out and enjoy. ;) The dish is ready to be served.
