
Baked Mushrooms Stuffed with Cheese and Spinach
Description
A delicious appetizer for any gathering. Golden on the outside and tender on the inside—these little mushrooms will make an excellent snack for any occasion.

1. Preheat the oven to 190°C. Wash and dry the mushrooms. Trim off the stems and finely chop them. Set the mushroom caps aside. Dice the onion.

2. Heat the olive oil and butter in a saucepan over medium heat. Add the onion and sliced mushroom stems, and sauté for several minutes until soft and golden.

3. Add breadcrumbs, salt, and black pepper. Mix and fry for 2 minutes. Remove from heat and let cool.

4. Squeeze excess liquid from the spinach. Set aside.

5. In a large bowl, mix softened cream cheese, sour cream, grated Cheddar cheese, and grated Monterey Jack cheese with the mushroom mixture.

6. Add chopped spinach, a little salt, a little black pepper, and hot sauce to taste. Mix.

7. Using a spoon, fill the mushroom caps with the prepared filling.

8. Arrange the mushrooms on a baking sheet or in a baking dish and bake in the oven for 20–25 minutes. Serve immediately or let cool to room temperature.
