
Baked Eggplants in the Oven
Description
The recipe won't take much time. Baked eggplants make an excellent side dish for meat or fish. You can also prepare them on a grill if you're outdoors. Roasted eggplants go well with dried herbs and garlic. Serve the eggplants cooled. You can use olive, sunflower, sesame, or nut oil. Serve hot.

1. Wash the eggplants and cut off the stems. Cut each one in half, then make diagonal crisscross cuts with a sharp knife, being careful not to cut through the skin. Sprinkle each half with salt and let sit for half an hour to draw out the bitterness and further open up the slits. After 30 minutes, squeeze the eggplants gently and pat dry with paper towels.

2. Place the eggplants on a baking sheet lined with parchment paper, brush the eggplants with olive oil, and turn them cut-side down.

3. Bake the vegetables in a preheated oven at 200 degrees for about 1 hour.

4. Remove the eggplants from the oven and sprinkle with rosemary, then let cool for 15-20 minutes and serve.
