
Baked duck with salt
Description
The recipe won't take much time. Buy a duck and salt two days before cooking. Rub about one-fifth of the salt over the duck, inside and out, and place it on a flat dish in the refrigerator. Repeat the process in the evening, twice the next day, and once in the morning on the day you will cook it. Rinse the duck thoroughly under running water. Pat dry with paper towels. Place the bird in a deep pot slightly larger than the duck and cover with water. Put the pot into a baking pan half-filled with water and bake in the oven at 180°C for one and a half hours. After that, remove the duck from the pot and transfer it to a baking dish. Increase the oven temperature to 230°C and bake for about 30 minutes, until a golden crust forms. Serve the duck hot on a large flat platter with orange sauce or orange-wine sauce.
