
Baked Pumpkin

Wash the pumpkin and cut it in half. Using a spoon, scoop out the flesh and seeds. Do not discard the seeds.

Peel the pumpkin. This is easiest done with a vegetable peeler. Make crosswise cuts 5–7 mm wide across the entire surface of the pumpkin, without cutting all the way through. For easier slicing, you can use wooden spoons as a stop.

Place sprigs of rosemary (or sage or a bay leaf) between the slices, brush with olive oil, and sprinkle with salt and pepper. Bake in the oven at 200°C for 15–20 minutes.

In a small saucepan over medium heat, warm the butter, honey, lemon juice, a pinch of salt, and sage. Simmer gently for 1–2 minutes, stirring occasionally.

Brush the pumpkin with the glaze. Bake for 40–50 minutes until done, brushing the pumpkin with the glaze every 10–15 minutes. Cover the cooked pumpkin with foil and let rest for 10–15 minutes.
