
Baked Pork for Burgers
Description
This recipe won't take much time. Slow cooking the meat at low temperatures makes it tender and juicy. A multicooker is excellent for cooking meat at low temperatures. All you need to do is set the mode, and the multicooker will take care of the rest on its own. It can be served warm or chilled.

Rinse the pork with ice-cold water and pat it dry well. Mix the spices with sugar, soy sauce, rice vinegar, and olive oil. Rub the meat well, pour the remaining spiced mixture over it, and refrigerate for 24 hours. Turn it over a couple of times.

Place the meat in the multicooker bowl, pour in the remaining marinade, add sugar, rice vinegar, and half a cup of water. Set the temperature to 95°C and the time to 2 hours. Then reduce the heat to 85°C and roast the pork for another hour. Turn the meat over once every half hour.

The cooked pork is so tender that it easily shreds into fibers with two forks. And so aromatic! Shred the meat into fibers and mix it with the sauce left at the bottom of the slow cooker. If a lot of liquid remains, take 3–4 spoonfuls, no more. Keep the meat hot until serving.

While the pork is roasting, you can prepare barbecue sauce. For this, gently heat finely chopped onion and garlic in oil until translucent. Add paprika—both smoked and regular—brown sugar, and rice vinegar. Heat for a couple of minutes, stirring. Then add homemade tomato sauce, mustard, and a spice mix. Season with salt to taste. Simmer, stirring, until thickened—about 10 minutes. Let cool and pour into a clean dry jar. In the refrigerator, this sauce keeps for about a month.

Marinate the onion in vinegar to taste. For the burgers, use homemade rye buns. Cut them in half and warm them on the grill or in the oven until the crust is crispy. Spread sauce generously on one half of the bun, add a good portion of meat, add the marinated onion, and cover with the other half of the bun, also spread with sauce.
