
Baked mackerel in Mexican style
Description
The recipe won't take much time. Mackerel prepared in Mexican style is cooked with vegetables and rice. We use a frozen vegetable mix labeled "Mexican Mix"—this vegetable blend makes the fish especially delicious. Serve hot.

Step 1

1. Peel the onion and cut it into small cubes, then sauté it in vegetable oil on a heated skillet until translucent. Transfer the onion to a baking dish.

2. Place the vegetable mixture on top of the onion. This mixture consists of sweet peppers, zucchini, corn, carrots, as well as string beans, green peas, and red beans.

3. Thoroughly rinse the rice, pour water over it, and place it on high heat to boil. Once the water comes to a boil, reduce the heat and continue cooking for about three minutes. Do not let the rice cook completely. Drain the water, then add the rice to the vegetables, along with finely chopped garlic, and mix everything well.

4. Prepare the mackerel. Thaw the fish, remove the tail and head, cut off the fins, and remove the internal organs. Cut the fish into slices approximately two to three centimeters thick, rinse the fish pieces thoroughly, and salt them.

5. Prepare the marinade. Mix sour cream with white wine or water, add ground cayenne pepper, chili pepper, and salt. Mix well. Place the fish on top of the vegetables and pour the sour cream and spice mixture over it. Let it sit for about ten minutes.

6. Place the baking sheet in a preheated oven for about thirty minutes over medium heat. Then remove and arrange on plates.
