
Baked mackerel in foil with carrots

The recipe won't take much time. Mackerel can be used to prepare many different dishes. For my little son, I often cook mackerel soup—it's not only very tasty but also healthy! Baked mackerel is perfect for a family dinner or even a festive lunch. No matter what filling you use, the fish always turns out delicious. Today I want to share my favorite version. Serve hot.

Prepare all the necessary ingredients. Clean the mackerel, remove the entrails, take out the gills, and thoroughly rinse the fish inside and out. Peel the onion and carrots.

Dice the onion into small cubes. Don't use too much onion, as our main ingredient is carrots—take plenty of them, either 1 large or 2 small ones. Grate the carrots on a coarse grater. Sauté the vegetables in a small amount of vegetable oil until soft.

Rub the mackerel with salt on the outside and inside, and sprinkle with about 1 teaspoon of lemon juice.

Place 2-3 lemon slices inside the fish belly.

Stuff the mackerel with sautéed vegetables, as much as will fit, and place the rest on top.

Wrap the mackerel in foil, sealing the edges tightly so that the juice does not leak during cooking. Bake in the oven for 30 minutes.
