
Baked mackerel in foil with carrots

1. Prepare all the necessary ingredients. If you bought frozen mackerel, it must be defrosted naturally. Leave it at room temperature for 1.5–2 hours. As a last resort, you can place the mackerel near a heated stove burner. However, under no circumstances should you defrost mackerel in a microwave.

2. Remove the entrails from the mackerel and cut out the gills. Rinse the fish thoroughly and pat dry with a paper towel. Rub the mackerel inside and out with a halved lemon, then season with salt and pepper.

3. Grate the carrot on a fine grater, chop the onion into small pieces, or cut into quarter-rings.

4. Sauté the onion until translucent, then add the carrot and cook until both ingredients are soft.

5. Stuff the mackerel with sautéed onion and carrots.

6. Wrap the fish in foil and bake in the oven for 35 minutes (temperature 180 degrees). Unwrap the foil 6-8 minutes before the end of cooking to form a delicious crust on the surface of the fish.
