Baked mackerel with onion and lemon
Description
We're used to baking mackerel (and other fish) either with lemon, or brushed with mayonnaise, or on a bed of onions. But here, we have all of it at once—and it's so delicious! The lemon flavor is very pronounced, yet it pairs so perfectly with the fish that I can't even imagine mackerel without it anymore. I'd like to specially mention the onions. They add an amazing taste, and the onions themselves turn out incredibly delicious!!!! I layer the mackerel pieces with onion rings, and whatever onions are left I just place at the bottom of the baking dish—they get nicely browned, soak up the fish juices, and become absolutely delicious.
