
Baked herring

1. Rinse the fish, remove the skin, and discard the tail and head.

2. Cut the fillet in half and carefully remove the large bones.

3. Rub the fish on both sides with salt, spices, and pepper. Line a baking sheet with foil, place half of the currant sprigs on it, then put the fish on top. Place sliced garlic on the fish.

4. Carefully join the two fillet pieces together. (You can even tie them with a string.) Place bay leaves and the remaining currant sprigs on top.
