
Baked Fish with Potatoes and Tomato Sauce
Description
The actual preparation time for this dish will take you only 20 minutes. Potato slices are softened in the microwave, then transferred to a baking dish. Shrimp are placed on top and covered with tomato sauce—very simple, yet so unusual and delicious.

1. Preheat the oven to 200 degrees. Slice the potatoes into 3 mm thick slices. Place the potato slices into a 20x20 cm baking dish. Drizzle with oil and sprinkle with ½ teaspoon of salt. Mix well, then spread the potatoes in an even layer. Cover with plastic wrap and pierce several holes in the film. Microwave on high power until the potatoes become soft, approximately 4 to 5 minutes.

2. Meanwhile, in a food processor or blender, combine the tomatoes with their juice, peeled and halved garlic clove, roughly chopped cilantro, sliced jalapeño peppers, and their juice. Blend until smooth, forming a purée.

3. Place the fish fillet in a single layer on top of the potatoes.

4. Evenly pour the prepared tomato sauce over.

5. Bake in the oven for 20 minutes.
