Baked Pasta with Feta Cheese and Shrimp

    1. Preheat the oven to 200 degrees. Crumble the feta cheese. Finely chop the dill and parsley. Peel the shrimp and halve them if desired. Grate the cheese until you have about 2 cups. In a small bowl, mix the breadcrumbs, a quarter of the crumbled feta cheese, a pinch of lemon zest, 2 teaspoons of parsley, and 1 tablespoon of melted butter. Stir with a fork and set aside.

    2. In a large pot, bring salted water to a boil. Cook the pasta according to the package instructions until done. Drain the water and return the pasta to the pot. Add raw shrimp and mix well.

    3. In a medium saucepan, melt the remaining 4 tablespoons of butter over medium heat. Add the flour and whisk to combine. Cook for 1–2 minutes, whisking constantly, until light golden in color. Whisk in the milk. Cook, stirring constantly over medium heat, until the sauce thickens, about 5 minutes. Remove the saucepan from the heat and stir in the remaining feta cheese, Gruyère cheese, remaining parsley, remaining lemon zest, dill, salt, and pepper. Pour the sauce over the shrimp pasta and mix well.

    4. Transfer the pasta with sauce into a greased baking dish. Evenly sprinkle with the breadcrumbs mixture on top. Bake for 20–25 minutes, until golden brown. Then remove from the oven and let cool for 5–10 minutes before serving.
