
Baked Pasta with Sausage and Tomatoes

The recipe won't take much time. Baked pasta is a dish for true lovers of Italian cuisine. Serve hot.

1. Thinly slice the mushrooms and tomatoes. Press the garlic. Preheat the oven to 200 degrees. Grease a baking dish with oil. In a large pot, cook the pasta in boiling salted water for 3 minutes less than the time indicated on the package instructions. Drain the water and return the pasta to the pot.

2. In a large skillet, heat the oil over medium heat. Brown the Italian sausages. Remove from heat and cool. Grate the Provolone cheese. Finely grate the Parmesan.

3. In a large saucepan, melt the butter over medium heat. Add the flour and garlic. Cook, whisking constantly, for 1 minute. Gradually add the milk, bringing to a boil. Add the grated nutmeg, continuing to whisk.

4. Add mushrooms, sausage, and tomatoes, sauté for 1 minute. Remove from heat and gradually mix in Provolone cheese and 1/2 cup Parmesan.

5. Add the pasta, season with salt and pepper.

6. Transfer the mixture to a baking dish and sprinkle with the remaining Parmesan cheese. Bake until golden, about 20–25 minutes. Let stand for 5 minutes before serving. For freezing: After sprinkling with Parmesan, tightly cover the dish with foil and freeze for up to 3 months. To prepare, preheat the oven to 200°C (400°F) and bake, without removing the foil, for about 1 1/2–2 hours. Remove the foil and bake until golden, about 15 minutes.
