
Baked flatbread with potatoes and onions
Description
The recipe won't take much time. Preheat the oven to 200 degrees. Heat oil and saffron in a skillet over medium heat. Add potatoes, onion, and garlic, and mix well. Lightly press the mixture with a spatula. Reduce heat to low, cover with a lid, and cook for 10 minutes. Stir, season with salt and pepper, and press the mixture with the spatula again. Cover and cook for another 10 minutes. Drain the liquid through a colander, leaving the oil behind. Whisk together eggs, parsley, and thyme. Season with salt and pepper. Add to the potato mixture. Heat 2 tablespoons of oil in a skillet over medium heat. Pour in the egg-potato mixture, reduce heat, and cook for 2 minutes. Bake in the oven for about 5 minutes. Transfer to a plate and serve. Can be served with tea or coffee.
