Baked Chicken with Dough and Vegetables

Description

A delicious appetizer for any gathering. This unusual dish will replace the usual fried chicken and is sure to please everyone. Can be served warm or chilled.

    1. Prepare the dough. Chill the butter and cut it into cubes. In a small bowl, mix together the flour, baking powder, baking soda, salt, sugar, black pepper, and chopped green onions. Add the butter and cheese. Knead the dough by hand. Make a well in the flour mixture and pour in the buttermilk. Using a fork, mix all the ingredients. Roll out the dough on a lightly floured work surface to a thickness of 3.5 cm. Using a round cookie cutter, cut circles from the dough. Gather the scraps, re-knead the dough, roll it out again, and cut out more circles. Place the dough circles on a small baking sheet and refrigerate.

    2. Prepare the filling. Preheat the oven to 200 degrees. Finely chop the onion, carrots, and zucchini. Press the garlic through a garlic press. Mince the chicken. Set aside. In a medium saucepan over medium heat, melt the butter. Add the flour and cook, stirring, for 1 minute. Reduce the heat and add the chicken broth. Continue whisking. Add the milk and cream cheese. Cook over low heat, stirring often, until the cheese melts and the mixture thickens. Add the chicken, lemon juice, and nutmeg. Stir. Season with salt and pepper to taste. Remove the mixture from the heat and set aside.

    3. In a medium skillet over medium heat, melt the butter. Add the onion and sauté until translucent, about 3 minutes. Add the minced garlic and sauté for 1 minute. Add the carrot, zucchini, and peas. Cook for about 3 minutes. Remove from the heat and add the vegetable mixture to the chicken mixture. Stir until evenly combined.

    4. Spread the mixture into a baking dish. Remove the dough from the refrigerator and place it on top of the filling. Brush the top with heavy cream, buttermilk, or beaten egg. Bake for 20–23 minutes until golden brown. Remove from the oven and let cool slightly before serving. To reheat the dish, preheat the oven to 150°C. Cover the dish with foil and bake for about 15 minutes. The dish can be stored covered in the refrigerator for up to 4 days.
