
Baked chicken with chili and peppers
Description
The recipe won't take much time. Baked chicken with spices is a great dish for a family dinner. Rubbing the chicken with salt helps it retain moisture inside during baking. Serve hot.

1. Cut the chicken into 2-3 large pieces. Using a sharp knife, make 2 or 3 small cuts in the skin of each chicken piece, being careful not to cut into the meat. Add salt, sugar, and spices to a small bowl and mix thoroughly.

2. Rub the chicken with the spice mixture, carefully lifting the skin to evenly distribute the spices over the entire surface. Place the chicken skin-side up on a rack, loosely cover with aluminum foil, and refrigerate for 6 to 24 hours.

3. Pierce each chicken piece with 2-3 toothpicks, placing them near the edge of the skin. Preheat the oven to 220°C. Bake the chicken until a meat thermometer reads 60°C, about 15 to 20 minutes. Increase the oven temperature to 260°C and continue baking until the chicken is browned and the thermometer registers 71°C, about 5 to 8 minutes. Remove the cooked pieces from the oven. Continue baking the thighs and/or drumsticks until the thermometer reads 77-79°C, about 5 minutes.

4. Remove the chicken from the oven, place it on a rack, and let it cool completely before refrigerating or serving.
