
Barbecue Baked Chicken
Description
In a large bowl, whisk together eggs, water, milk, 2 tablespoons salt, and 2 tablespoons pepper with a fork until well blended. In another large bowl, mix flour, 1/4 cup salt, 5 teaspoons pepper, garlic, and Mesquite seasoning. Fill a large heavy skillet or wok halfway with oil. Heat to 365°F (180°C). Using a fork, dip a piece of chicken into the egg mixture, then into the flour, back into the egg mixture, and again into the flour. Place into the hot oil and fry. Once the chicken is browned on one side, turn and fry until browned on the other side. Preheat the oven to 300°F (150°C). Grease a glass baking dish with oil. Pour enough barbecue sauce to cover the bottom. Arrange the fried chicken in the prepared dish. Pour the remaining sauce over the top. Bake for 10–15 minutes in the preheated oven.
