First, prepare the marinade for your roast. To do this, bring clean drinking water to a boil, add bay leaf, salt, and any spices you like. Mix everything thoroughly.

Wash a piece of lean pork, dry it, and remove all veins and fat. Let the marinade cool completely. Place the meat in a large pot and pour in the marinade so that it completely covers the meat. Leave the meat in the marinade for three days in the refrigerator.

When the meat has marinated, take it out of the marinade and pat it dry with paper towels. Rub the meat with the salt and spice mixture. Make deep slits with a knife, and insert a peeled garlic clove into each slit.

Place the meat in a roasting bag. On top of the meat, place the bay leaves from the marinade. Bake at 180 degrees Celsius for one hour. Then tear open the bag and bake for another 10 minutes until a golden crust forms.
