
Baked cod in tomato sauce
Description

1. Prepare all the ingredients. Place the cod on foil previously moistened with olive oil. Season the fillet with salt, pepper, and juice of one lemon. Let the fish marinate in the refrigerator for 1 hour.

2. Meanwhile, sauté the onion in olive oil until semi-transparent. Without forgetting to stir, add the garlic to the pan and continue cooking.

3. Add the chopped tomatoes to the onion. Then pour in the wine, and season with paprika and cinnamon to taste.

4. Finely chop the parsley. Sprinkle 2/3 of it over the vegetable mixture and simmer over low heat for 15 minutes.
