Description

Perfect for stocking up for winter. The more apples you freeze, the more dishes you can make from them in winter; they may also come in handy in summer, when the cherries are ripe and you can make compote from them. Serve at the table or store in the pantry.

    It's best to use tart-sweet apples, or half sweet and half tart. If you only have tart apples, add twice as much sugar. Wash the apples, remove the cores and any spoiled spots. Peeling is not necessary.

    Cut the apples into large cubes; there’s no need to cut them too small or neatly. Sprinkle the apples with sugar and let them sit for several hours so they release their juice.

    After that, transfer the apples to the container in which you plan to store them and place them in the freezer. You can use the apples as soon as they are frozen, but as a rule you only need them in winter. I usually bake a pie and make a cottage cheese casserole from such apples—the aroma is so wonderful that store-bought apples blush with envy.
