
Frozen raspberries
Description
A simple way to prepare raspberries for later. Choose non-juicy varieties with large berries for freezing. Freeze them on a board or a flat-bottomed plate, making sure to pat each berry dry. After 2–3 hours in the freezer the berries will be firm enough to transfer to a food container and return to the freezer. Remember that berries absorb other odors very quickly, so keep the container tightly closed.

Prepare the listed ingredients. Sort through the berries, remove stems, leaves, and any spoiled or crushed raspberries.

Transfer it to a deep bowl or salad bowl and cover with cold water. Rinse gently, taking care not to crush the berries. Drain the water. Repeat if necessary.

Line a plate or board with paper napkins and place the berries on it one at a time, patting them dry on all sides. Do the same with all the berries.

Arrange them on a board—not a wooden one—spaced evenly apart, and place the board in the freezer compartment for at least 2–3 hours. You can also leave them overnight and move the raspberries to long-term storage in the morning. If you freeze the berries while they are still in the rinsed batch, they will stick together into one solid clump and you will not be able to break it apart when needed.

After the specified time, the berries will be well frozen and can be removed from the board. It is best to do this with a sharp knife, trimming the berries at the base. Sometimes the berries may freeze to the board and break in your hands. If you trim them with a knife, they will stay intact.

Transfer the frozen berries into a container or freezer bag and place them in the freezer.
