
Beef Aspic
Description
A delicious appetizer for any gathering. It got the name zalivnoye from the addition of Provansal mayonnaise, which used to be the one—and more precisely, the only—mayonnaise in the CIS countries. Times have changed, and supermarkets now sell mayonnaises from various brands, but the zalivnoye recipe has not changed because of that. The appetizer is ready. Serve immediately.

Prepare the listed ingredients. Rinse the meat and remove membranes and sinew. Peel the carrots and onion and rinse them.

Place the vegetables and meat in a kazan or in a pot with a non-stick bottom. Pour in hot water and place the container on the stove. Bring to a boil and skim off the foam that forms. Then reduce the heat to moderate, add salt and pepper, and simmer for about 1.5 hours.

Some of the broth will boil away — that's normal. If desired, you can add more hot water. Taste the meat; it should become tender.

Remove the meat and vegetables from the broth, and press the peeled garlic cloves into the broth. Cut the beef and vegetables into small cubes.

Mix the cut pieces with green peas and spoon into glasses or bowls, filling each to two-thirds of the capacity.

Strain the broth through a fine-mesh sieve or a double layer of cheesecloth. Pour it into two bowls: a little more in one and a little less in the other. Add half of the gelatin to the bowl with more broth and stir. Let it swell for 5 minutes, then stir again.

Pour the broth into glasses so that it covers the slices. Place the containers in the refrigerator or leave them in the cold for about 1–1.5 hours.

Heat the remaining portion of broth and sprinkle in the gelatin. Let it bloom for 5 minutes, then add the mayonnaise and whisk to combine.

Pour into containers for aspic and place back in the refrigerator.

Garnish the set aspic to your taste and serve.
