
Lenten aspic
Description
A delicious appetizer for any gathering. Here is a light, tasty dish that will shine on a lenten table and suits those who do not eat meat. Green peas, corn, mushrooms, and broccoli go together beautifully. I’ll walk you through it—serve with fresh herbs and sauce.

1. A minimum of ingredients — and you have an excellent lenten appetizer on your table. So, cook the ingredients and make vegetable broth: add peas and corn to boiling water.

2. Then add the bell pepper and broccoli (you can use cauliflower instead). Cook for another 5 minutes.

3. Remove the vegetables and strain the broth. You can also add potatoes here, if desired.

4. Arrange the vegetables and mushrooms in the mold and let the broth cool slightly. Then add the dissolved gelatin to it and let stand for another 15 minutes. Pour the broth over the vegetables in the mold.

5. Refrigerate until fully set. Before transferring the aspic, warm it in a water bath for about 1–2 minutes and transfer to a plate (pasochka-style).
