
Aspic for a Year: Rats

Prepare the ingredients for making aspic for the Year of the Rat.

Rinse the chicken and place it in a pot. For this recipe, you can use any parts of the chicken—drumsticks, thighs, legs, or wings. But I recommend using meat on the bone; it is tastier, and the aspic will set better.

Cover the meat with water and cook for 1 hour. After the water comes to a boil, skim off the foam, add salt, cover the pot with a lid, and simmer over low heat so the broth does not boil away. Season the broth with pepper to taste.

Soak the gelatin in 150 grams of cold water and let it stand for 15 minutes until it swells.

Remove the meat from the broth and add the bloomed gelatin to it. Stir the gelatin into the hot broth; it will dissolve completely.

Let the chicken cool slightly and separate the meat from the bones. Remove the skin as well.

Place the chicken on the bottom of the dish. You can use a nice glass or ceramic dish.

Pour warm broth over the meat, let it cool completely on the counter, then refrigerate the aspic until fully set.

After 3-4 hours the aspic will set; garnish it with mice made from boiled quail eggs. Make the ears and tails from carrot. You can make the mice’s eyes from peppercorns. Garnish the aspic with herbs.
